V60 recipe

The Hario V60 is one of the most famous ways to prepare coffee. The V60 gets its name from the angle formed by its V-shape. Grooves on the inside of the dropper support extraction along the side of the filter.

This complete filtration creates extremely clean flavors, while the paper filter also allows some coffee oils to pass through.

Recipe

  • Coffee - 18 grams
  • Water - 300g
  • Water temperature - 99'C
  • Coffee granulation - medium fine
  • Duration 2:45 - 4:00


Step 1 - Place the filter in the V60 and, using warm tap water, thoroughly wet the filter. At this stage it is important to let the water drain freely from the filter, do not rotate the V60 to get the water out as quickly as possible. This is important because we don't want to break the grip the filter has on the V60. This step has two benefits - it gets rid of any residual filter paper taste while pre-heating your V60 for pouring.

Step 2 - Carefully spread the coffee into the center of your V60. At this point, you can tap the V60 a few times to flatten the coffee and create a flat bed for it. After that, use your finger to make a hole in the center of the coffee bed.

Step 3 - Prepare your kettle, set the timer and start pouring coffee, starting from the hole you made. When you fill the hole with water, pour the remaining dry parts of the coffee in a circular motion. In this step, we want to use 50 to 60 grams of water and pour the coffee within 10-15 seconds. When you have poured the coffee, take your V60 and rotate it slightly, so that the water is successfully mixed with all the coffee and so that you don't have pockets of wet coffee. This step is also called the Bloom phase of coffee preparation, in which the coffee releases CO2 and is ready for extraction. This phase lasts until 00:45 on the timer when we move to the next step.

Step 4 - Starting from the center of the coffee bed, gently pour the coffee in a circular motion. Using concentric circles, we reach the edges of the V60 and stay there, i.e. pour coffee only on the largest circle. We do this until we use a total of 180 grams of water (together with the previous step). You should pour the water no later than 1:05 on the timer.


Step 5
- Carefully rotate the V60 a few times. We do this to level the coffee bed and possibly remove potential channels that have been created in it.

Step 6 - The timer reads 01:15 and we start our final pouring of coffee. Starting from the center of the coffee bed, we go again in concentric circles to the edge and back. We pour until we use a total of 300 grams of water.


Step 7 - Carefully rotate the V60 once more and wait for the water to drain.
